Our family continues this tradition of butchery, an art form and an excellent way to work together and provide a valuable service to the community. Working in the food business allows us to get to know so many community members and their families. Small towns and their small family businesses are vital to Long Island's growth and are a big part of why young families choose to purchase homes here.

Working in Trades of all sorts is having a resurgence, and the art of bringing custom cuts to your dinner plate is truly mesmerizing but challenging. You will enjoy this inside look at your local butcher shop.


Our blog, The Butcher's Cut, will be written from the butcher's point of view, showcasing simple, yet delicious cuts that can be turned into tasty meals. Each week, you will read about a specific cut of meat, which will be accompanied by a fun recipe for you to make at home. After thirty-five years or more of working at the meat market, the butcher is always the first person you should ask about the best cuts to make an extra special meal.


The most basic type of beef that we are asked for at the market is Ground Beef. We are cautious with how we prepare our beef for grinding. The butcher at R&S Market starts with whole-muscle meat, so we do not grind any trimmings. We take whole prime cuts of meat, usually from the beef shoulder, and grind them with small amounts of beef fat to create the perfect eighty percent lean ground beef. At our market, we make ground beef fresh when you order it.





The Butcher's Beef Bowl Recipe


Ask your local butcher to grind up some fresh chop. You will likely need half a pound per bowl.


Servings: 4 Bowls

Prep Time: 10 Minutes

Cook Time: 15 Minutes



Ingredients

  • 2 lbs freshly ground beef (80/20 blend)

  • 6 tbsp taco seasoning (or make your own: 1 tsp each paprika, cayenne pepper, cumin, salt, and black pepper)

  • 1 avocado; chopped

  • 2 plum tomatoes; chopped

  • A handful of fresh cilantro; chopped


    Optional toppings:

  • - Corn and black bean salsa

  • - Spicy finishing sauce (hot honey or barbecue)

  • - Tostitos chips


Instructions

Prepare the Beef:

  • Heat a medium-sized sauté pan over medium-high heat.

  • Add the ground beef, then sprinkle it evenly with taco seasoning.

  • Cook, stirring occasionally, until the meat is browned and cooked through (about 8-10 minutes).

  • Ensure the beef reaches an internal temperature of 155°F using a meat thermometer.


Assemble the Bowls:

  • Place ½ cup of cooked beef in the bottom of each serving bowl.

  • Add your favorite toppings, such as avocado, tomato, cilantro, and any optional accompaniments.


Serve & Enjoy:

• Pair with prepared corn and black bean salsa, a spicy finishing sauce such as hot honey or barbecue sauce, or Tostitos chips for extra flavor.
