Butchery is not for the timid. It requires strength, knowledge, and knife skills learned over time, often passed down through generations. Anthony Sr. has been working at R&S Meat Market since the late 1980s. At the age of seventeen, he began learning the trade and has continued the tradition, which he will now pass down to his son, Anthony Jr.
After earning his Master's degree in International Business, Junior realized he preferred working with his father and has been quick to learn and to immerse himself in the butchery trade he has grown up in over the past twenty-four years. Owning and operating a butcher shop involves long hours and many days spent at the market. It is highly disciplined work and very rewarding.
